Hi John,
I haven’t used a Canon R5 but I do know some local shooters who have that camera and love it. I’ll try to address what you ask from my knowledge of reading about the R5 and also talking with others.

For low light, I can tell you that my understanding is that Canon is baking noise reduction into the RAW files so they may come in appearing as though they have lower noise than the Z9 but both cameras are probably on par but with the Z9 you will have to apply noise reduction according to your taste right off.

Color is very subjective. I have found that skin tones since the Nikon D5 have been very natural and Canon has always had that quality. For other colors, photographers tend to vary on what they like.

My R5 shooting friends rave about great dynamic range on the R5 and I can do the same on the Z9.

I think where you will find the Z9 pull way ahead of the R5 is battery life, shooting speed, over all speed (turn on time and more) and no overheating issues. All of this depends on your use case.
